Moisture production with boiler

The production of humidity with a boiler allows for separate control of temperature and humidity content during leavening.

Humidity sensor

A precise sensor constantly monitors the quantity of humidity in every moment of the leavening.

Anti-condensation sky

The ceiling of the leavening chamber is designed to prevent the formation of drops of condensation which could otherwise fall on the product and ruin it.

Recovery of water

A recovery system makes it possible to reuse the condensed water and thus reduce water and energy consumption to a minimum.
