The XPL P pastomasters are pasteurizers that are easy to use, simple to manage, useful in every gelato laboratory.
QUALITY'
7 basic programs for the production of ice cream mixes: High pasteurization 85°C, Low pasteurization 65°C, Intermediate pasteurization with choice of temperature between 65°C and 95°C, Chocolate pasteurization 90°C, Cooling and Maturation at 4°C , sugar syrup and invert sugar.
PERFORMANCE
The ingredients are mixed and pasteurized inside the exchange pump with a "dry bain-marie", a Carpigiani patent, which guarantees:
High micronization of fat globules to fine dimensions from 2 to 5 microns for creamier ice creams,
Superior efficiency allows you to work even with minimal charges without the risk of burning the mixture.
COMFORT'
Lid and exchange pump: it is possible to introduce the ingredients while the mixture is stirring, working in complete safety.
Optional Bucket rest shelf in steel.
Optional Kit for hygienically transferring the mixture.
SAVINGS
Pastomaster XPL P are pasteurisers that allow you to do your job easily while saving time.
SAFETY
Lid and Display: Once the 50°C is exceeded, by lifting the lid the stirring stops, to avoid splashes of hot mixture. The display shows the message "Attention Hot".
Black-out and water interruption: based on the time and temperature parameters, it checks whether or not the mixture has undergone an alteration and if so, starts a new pasteurization cycle.
Optional Teorema: control and diagnosis via internet for easier assistance.
HYGIENE
Temperature-controlled tap: the mixture circulates continuously inside the tap, ensuring the correct operating temperature of the same.
Total cleaning: the tap can be completely disassembled, washed and inspected to ensure maximum machine hygiene.
Carpi Care kit: ask your dealer to keep your machine hygienically perfect.
